  • 3 cups old-fashioned rolled oats Key for texture
  • 1.5 tsp baking powder
  • 2 tsp ground cinnamon Adds warming flavor
  • 0.25 tsp ground nutmeg
  • 0.75 tsp salt Enhances flavor
  • 0.5 cup lightly packed brown sugar
Wet Ingredients
  • 2.5 cups milk Any kind you love
  • 2 large eggs
  • 1 tsp vanilla extract For added flavor
  • 4 tbsp melted butter or coconut oil Butter makes it richer
Topping
  • 2-3 large apples Honeycrisp or Gala are preferred, peeled and diced

Method
 

Preparation
  1. Preheat your oven to 325°F (165°C) and grease a 9x13-inch baking dish.
  2. In a large bowl, whisk together the oats, baking powder, ground cinnamon, nutmeg, salt, and brown sugar until well combined.
  3. In a separate bowl, whisk together the milk, eggs, and vanilla extract until blended and smooth.
Combine
  1. Pour the wet mixture into the dry ingredients and stir in the melted butter until no dry patches remain.
Apple Layering
  1. Scatter diced apples across the greased baking dish.
  2. Pour the oatmeal mixture over the apples.
Baking
  1. Bake for 35-45 minutes until golden brown and set.
  2. Let it cool slightly before serving.
