Sweet, crispy, and coated in cinnamon sugar, these baked churro bites are a delightful treat perfect for any occasion.

Ingredients
  

For the Dough
  • 1 ¼ cups water
  • 5 tablespoons chilled unsalted butter keeps it creamy
  • 2 tablespoons packed brown sugar
  • ½ teaspoon fine salt
  • 1 ¼ cups plain flour
  • 1 teaspoon vanilla essence the secret love potion
  • 2 large eggs
For the Sweet Coating
  • 2 tablespoons melted butter for brushing
For the Cinnamon Sugar Mixture
  • cup granulated sugar
  • 1 tablespoon ground cinnamon
  • ¼ teaspoon salt

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a medium saucepan, combine the water, butter, brown sugar, and salt. Bring this mixture to a boil over medium heat.
  3. Once boiling, remove from the heat and stir in the flour all at once until combined and it forms a ball.
  4. Cook the mixture on low for about 1-2 minutes, stirring, until it pulls away from the sides of the pan.
Dough Preparation
  1. Let it cool slightly, then add in the vanilla and eggs one at a time, mixing until each is fully combined.
  2. Ensure the mixture is smooth and slightly glossy.
Shaping and Baking
  1. Scoop out tablespoon-sized lumps of dough and roll them into little balls.
  2. Place them on the prepared baking sheet, spaced out, and brush lightly with melted butter.
  3. Bake for about 18-20 minutes until golden and fragrant.
Finishing Touch
  1. As soon as they come out, roll the hot churro bites in your cinnamon sugar mixture.

Notes
