Ingredients
  

For the Apples
  • 4 pieces Apples (Granny Smith or Honeycrisp recommended) Choose for a perfect sweet-tart punch.
For the Cheesecake Filling
  • 8 oz Cream cheese, softened Let it sit out a bit so it mixes easier.
  • ¼ cup Sugar Adjust based on your taste; I like it sweet but not too sweet.
  • 1 tsp Vanilla extract For that warm hug in flavor.
  • 1 tsp Cinnamon Because apples and cinnamon are basically besties.
For Topping
  • 1 tbsp Lemon juice To brighten up the flavors.
  • ½ cup Graham cracker crumbs The crust-y goodness.
  • 2 tbsp Butter, melted So it sticks together like a champion.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C). Wash and core the apples gently, leaving the bottom intact.
  2. In a mixing bowl, blend together the softened cream cheese, sugar, vanilla extract, and a pinch of cinnamon until smooth.
  3. Fill each apple with the cheesecake mixture, pressing gently to create a snug fit.
  4. Mix the graham cracker crumbs with melted butter and a sprinkle of cinnamon.
  5. Top each stuffed apple with the graham cracker mixture and drizzle with lemon juice.
Baking
  1. Place the apples in a baking dish and bake for 25-30 minutes, until tender and the filling is set.
  2. Let cool slightly before serving.
