These quick and easy Chocolate Chip Banana Bars are a delightful twist on the classic dessert, featuring warm, buttery goodness and pockets of melted chocolate chips.

Ingredients
  

Base Ingredients
  • ½ cup unsalted butter, melted Let it cool down a bit before mixing
  • ¾ cup light brown sugar
  • 1 large egg, room temperature
  • 1 cup mashed banana (about 2 medium bananas)
  • 2 teaspoons vanilla extract
  • 1 cup all-purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon salt
Topping
  • ¾ cup mini chocolate chips, divided Because who doesn’t love more chocolate?

Method
 

Preparation
  1. Preheat that oven to 350 F (177 C). Grab an 8×8 pan and line it with parchment paper, hitting the bottom and two sides.
  2. Toss your butter in a microwave-safe bowl and melt it in the microwave for about a minute. Stir and zap again if not all melted.
  3. In a separate bowl, whisk together the flour, baking powder, and salt.
  4. In a large bowl, whisk the cooled butter and brown sugar together until combined. Then add the egg, mashed bananas, and vanilla extract, mixing until smooth.
  5. Gently stir in the dry mixture until just combined, then fold in mini chocolate chips, saving some for the topping.
Baking
  1. Spread the batter evenly in the prepared pan. Top with extra chocolate chips.
  2. Bake for 30-35 minutes or until the sides are firm and a toothpick in the center comes out clean or with a few crumbs.
Cooling and Serving
  1. Let cool in the pan to room temperature, then lift out using parchment, slice, and serve.

Notes
