Preparation
- Preheat that oven to 350 F (177 C). Grab an 8×8 pan and line it with parchment paper, hitting the bottom and two sides.
- Toss your butter in a microwave-safe bowl and melt it in the microwave for about a minute. Stir and zap again if not all melted.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- In a large bowl, whisk the cooled butter and brown sugar together until combined. Then add the egg, mashed bananas, and vanilla extract, mixing until smooth.
- Gently stir in the dry mixture until just combined, then fold in mini chocolate chips, saving some for the topping.
Baking
- Spread the batter evenly in the prepared pan. Top with extra chocolate chips.
- Bake for 30-35 minutes or until the sides are firm and a toothpick in the center comes out clean or with a few crumbs.
Cooling and Serving
- Let cool in the pan to room temperature, then lift out using parchment, slice, and serve.
