  • 1 cup all-purpose flour the backbone of any good brownie

  • ½ cup unsalted butter, softened it creams better when softened
  • 2 large eggs binds everything together
  • 2 tbsp lemon zest that zing we’re all here for
  • 2 tbsp lemon juice brings the zesty vibe
  • ½ tsp vanilla extract for a subtle warmth
For the Glaze
  • ½ cup powdered sugar because who doesn’t love a sweet topping?
  • 1 tbsp lemon juice more tartness!
  • 1 tsp lemon zest let’s not skimp on flavor

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line an 8x8-inch baking pan with parchment paper.
  2. In a large bowl, beat together softened butter and granulated sugar until light and fluffy.
  3. Add the eggs one at a time, beating after each addition. Stir in lemon juice, lemon zest, and vanilla extract.
  4. Gently stir in flour and salt until just combined.
Baking
  1. Pour the batter into the prepared pan and bake for 22-25 minutes or until a toothpick comes out clean.
  2. Let the brownies cool completely in the pan.
Glazing
  1. Whisk together powdered sugar, lemon juice, and zest until smooth.
  2. Spread the glaze over cooled brownies and chill in the fridge for about 15 minutes before slicing.
