Preparation
- Preheat your oven to 350°F (175°C) and line an 8x8-inch baking pan with parchment paper.
- In a large bowl, beat together softened butter and granulated sugar until light and fluffy.
- Add the eggs one at a time, beating after each addition. Stir in lemon juice, lemon zest, and vanilla extract.
- Gently stir in flour and salt until just combined.
Baking
- Pour the batter into the prepared pan and bake for 22-25 minutes or until a toothpick comes out clean.
- Let the brownies cool completely in the pan.
Glazing
- Whisk together powdered sugar, lemon juice, and zest until smooth.
- Spread the glaze over cooled brownies and chill in the fridge for about 15 minutes before slicing.
