- In another bowl, beat the eggs until blended.
- Dip each chicken breast in the egg mixture, letting the excess drip off.
- Roll the chicken in the cheesy breadcrumb mixture until fully coated.
Cooking
- Heat olive oil in a skillet over medium heat.
- Brown the chicken for about 2-3 minutes on each side until golden brown.
- Transfer the browned chicken to a baking dish and bake for about 20-25 minutes or until the chicken is cooked through.
- Ensure the internal temperature of the chicken reaches 165°F (75°C).
Serving
- Sprinkle fresh parsley on top before serving.
