Ingredients
  

For the Cream Filling
  • 4 large large egg yolks Pasteurized
  • 1 cup mascarpone cheese Provides creaminess
  • 1 cup heavy whipping cream For fluffiness
  • 3 tablespoons matcha powder Quality matcha is essential
  • ½ cup granulated sugar For sweetness
  • ¼ cup milk To warm and mix with yolks
For the Assembly
  • 24 pieces ladyfingers Quickly dipped in matcha soak
  • ¼ cup warm water For matcha soaking mixture
  • 1 tablespoon additional matcha powder For dusting on top

Method
 

Preparation
  1. In a medium bowl, gently whisk the egg yolks, milk, and sugar together over low heat until warm, then remove from heat.
  2. Add mascarpone cheese to the yolk mixture and whisk until smooth.
  3. In another bowl, whip heavy cream until stiff peaks form. Fold the whipped cream into the mascarpone mixture gently.
  4. Stir in matcha powder until fully combined.
Assembly
  1. In a shallow dish, mix warm water with additional matcha powder.
  2. Quickly dip ladyfingers in the matcha mixture and layer them in a dish.
  3. Spread a layer of the cream mixture over the ladyfingers.
  4. Repeat the layers until ingredients are used, finishing with the cream mixture on top.
  5. Dust the top with matcha powder before refrigerating.
Chilling
  1. Cover and refrigerate overnight to allow the flavors to meld and set.
